The Hebridean island of Islay lies on Scotland's wild west coast. The air is clean and the water is clear, and at certain times of the year the sea can be torn apart by storms which have claimed, and still do claim, the life of many a well-found ship.

Yet there is something about this intoxicating, naturally rugged environment that imparts itself to the islands most famous produce - Whisky.

Islay is a small island and has a world-wide reputation for its whisky. Ten distilleries, three of which are among the top 10 best selling single malts in the world, are to be found along the shores of Islay...

Peat is one of the ingredients which contribute to the unique qualities of Islay malt.

Peat is produced only when the vegetation grows more quickly than it can rot. Last years’ growth falls onto wet ground where it ‘cures’ rather than decays.

Thus, over centuries, peat is formed, and the spring water that filters down from the hills is the colour of strong tea.

...And it is peat as a fuel that dries and smokes the grain prior to fermentation imparting its distinctive flavour.
